Jason Meinke is a local favorite who hails from Apple Valley, Minnesota. Meinke was born on September 23, 1986 and was part of the Eastview Lightning High School football squad. During his time with Eastview, Jason Meinke earned three letters, was named all-conference in 2005, and participated in track and field.

In 2005, Meinke was a walk-on who redshirted with the University of Minnesota Golden Gophers football team.

During Meinke's 2006 season with Gophers football, he played in 3 games and was involved in 21 plays.
